Weight Watchers Pineapple Pancakes
Makes 8 pancakes

Ingredients
- 1 cup nonfat plain Greek yogurt
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup crushed pineapple, well drained
- 1 cup self-rising flour (or WW-friendly flour blend)
- Optional: 1 tsp cinnamon
- Cooking spray
Instructions
- In a bowl, whisk together the Greek yogurt, eggs, vanilla, and drained pineapple.
- Stir in the flour and cinnamon until just combined. Do not overmix.
- Heat a nonstick skillet or griddle over medium heat and lightly coat with cooking spray.
- Pour about ¼ cup batter for each pancake.
- Cook 2–3 minutes until bubbles form on top, then flip and cook another 1–2 minutes until golden brown.
- Serve warm with fresh pineapple, sugar-free syrup, or a dollop of Greek yogurt.
