Weight Watchers Pineapple Pancakes

Makes 8 pancakes
0–1 WW Points per pancake (depending on your plan and ingredients)

Ingredients

  • 1 cup nonfat plain Greek yogurt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple, well drained
  • 1 cup self-rising flour (or WW-friendly flour blend)
  • Optional: 1 tsp cinnamon
  • Cooking spray

Instructions

  1. In a bowl, whisk together the Greek yogurt, eggs, vanilla, and drained pineapple.
  2. Stir in the flour and cinnamon until just combined. Do not overmix.
  3. Heat a nonstick skillet or griddle over medium heat and lightly coat with cooking spray.
  4. Pour about ¼ cup batter for each pancake.
  5. Cook 2–3 minutes until bubbles form on top, then flip and cook another 1–2 minutes until golden brown.
  6. Serve warm with fresh pineapple, sugar-free syrup, or a dollop of Greek yogurt.
