Weight Watchers Lemon Blueberry Protein Bites

These soft, cheesecake-like protein bites are packed with protein, naturally sweet, and perfect for a low-point snack or dessert.

Ingredients

  • 1 cup fat-free cottage cheese
  • ¾ cup quick oats
  • 1 scoop (30g) vanilla protein powder
  • ½ cup fresh blueberries, finely chopped
  • Zest of 1 large lemon
  • 2 tbsp fresh lemon juice
  • 1 tbsp monk fruit sweetener or preferred zero-calorie sweetener
  • 1 tsp vanilla extract
  • Pinch of salt

Optional Glaze (0 Points)

  • 2 tbsp powdered monk fruit sweetener
  • 1-2 tsp lemon juice

Instructions

Step 1: Prepare the Base

Place the cottage cheese in a blender or food processor and blend until completely smooth and creamy.

Step 2: Mix the Dough

Transfer the cottage cheese to a bowl and add:

  • Quick oats
  • Vanilla protein powder
  • Lemon zest
  • Lemon juice
  • Sweetener
  • Vanilla extract
  • Pinch of salt

Mix thoroughly until everything is combined.

Step 3: Add Blueberries

Gently fold in the chopped blueberries. Crushing a few berries is fine—it adds extra flavor throughout the bites.

Step 4: Chill

Cover the bowl and refrigerate for 30-45 minutes. This allows the oats to absorb moisture and makes the mixture easier to roll.

Step 5: Form the Bites

Using a small cookie scoop or tablespoon, divide the mixture into 12 equal portions. Roll into balls with slightly damp hands.

Step 6: Final Chill

Place on a parchment-lined plate or tray and refrigerate for at least 1 hour before serving.

Optional Lemon Glaze

Mix powdered sweetener with lemon juice until smooth. Drizzle lightly over the chilled bites.
