Weight Watchers Whoopie Pie Cookies

These soft chocolate sandwich cookies are made lighter but still taste super rich and creamy — just like the ones in your photo!

Ingredients

Chocolate Cookies

  • 1 box sugar-free chocolate cake mix
  • ¾ cup plain nonfat Greek yogurt
  • 2 eggs
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract

Cream Filling

  • 1 cup light whipped topping
  • 4 oz reduced-fat cream cheese, softened
  • 1 tbsp sugar-free vanilla pudding mix
  • Sweetener to taste (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix all cookie ingredients until smooth. Batter will be thick.
  3. Scoop small rounds onto a parchment-lined baking sheet.
  4. Bake 8–10 minutes until soft and set.
  5. Let cookies cool completely.

Filling

  1. Beat cream cheese until smooth.
  2. Fold in whipped topping and pudding mix.
  3. Chill 10–15 minutes for thicker filling.

Assemble

  • Spread or pipe filling onto one cookie and top with another.
  • Refrigerate for best texture.
