Lemon Pizzelle Frozen Cream Sandwiches

Lemon Pizzelle Frozen Cream Sandwiches

Crisp lemon pizzelle cookies hold a vanilla cream filling that firms in the freezer. Folding instant pudding mix into whipped topping stabilizes the center, while freezing the assembled sandwiches on a flat tray preserves their shape.

Details

  • Yield: 8 sandwiches
  • Prep: 15 minutes
  • Freeze: at least 2 hours
  • Equipment: bowl, spatula, tablespoon measure, sheet pan, parchment, covered freezer container

Ingredients

  • 16 lemon pizzelle cookies, about 4 inches wide
  • 1 container (8 ounces) frozen whipped topping, thawed in the refrigerator
  • 2 tablespoons instant vanilla pudding mix
  • 1 teaspoon finely grated lemon zest
  • 1/2 cup thinly sliced strawberries, patted dry, optional

Method

  1. Line a sheet pan with parchment. Inspect the pizzelles and pair cookies of similar size.
  2. Fold the pudding mix and lemon zest into the thawed whipped topping until no powder pockets remain. Let stand 5 minutes to thicken.
  3. Place eight pizzelles flat-side up. Spoon 3 tablespoons filling onto the center of each and spread to within 1/2 inch of the edge.
  4. If using strawberries, arrange a single dry layer over the filling. Top with remaining pizzelles and press very gently until filling approaches the edge.
  5. Freeze flat for at least 2 hours, until the centers are firm. Transfer to a covered container with parchment between layers.

Assembly cues and troubleshooting

Thaw the topping only in the refrigerator; warm topping becomes loose and squeezes out. Instant pudding mix is specified because cook-and-serve pudding will not thicken without heating. Measure the dry powder rather than using an unspecified fraction of a package, since package sizes differ.

Pizzelles are delicate. Spread filling before adding the top cookie and press with a flat palm rather than fingertips. Wet strawberries soften the cookies and form ice crystals, so dry the slices well and keep them thin. If a cookie cracks, serve that pair as a layered frozen cup rather than forcing it into a sandwich.

Serving and variations

Let sandwiches stand at room temperature for 3–5 minutes before eating so the filling softens slightly. Do not microwave them. Vanilla pizzelles can replace lemon pizzelles; omit lemon zest or replace it with 1/2 teaspoon vanilla. Raspberries can replace strawberries but should be halved and dried.

Storage and safety

Store frozen in a covered container for up to 2 weeks. Remove only the portions being served and return the container promptly. Discard dairy-filled sandwiches left above 40°F longer than 2 hours, or 1 hour above 90°F. Do not thaw and refreeze the batch, because texture and food-handling quality decline.

Batch planning

Clear a flat freezer shelf before assembly and confirm the sheet pan fits. Work with four sandwiches at a time if the kitchen is warm, keeping the remaining filling refrigerated. Label the storage container with the preparation date. When stacking, place a rigid piece of parchment-covered cardboard between layers so the delicate pizzelles do not bear the weight above them.
