Ingredients
- 1 pound 90%-lean ground beef
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 eight-inch flour tortillas
- 1 cup shredded cheddar
- 1/2 cup diced onion
- 1/2 cup diced pickles
- 2 tablespoons mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon mustard
Method
- Mix mayonnaise, ketchup, and mustard. Divide beef into four 4-ounce balls.
- Heat skillet medium-high. Press one beef ball thinly onto one tortilla, leaving 1/2-inch border; season.
- Place beef-side down and cook 3–4 minutes until browned and beef reaches 160°F. Turn tortilla, add cheese, onion, and pickles, then fold.
- Cook 1–2 minutes per side until crisp. Repeat. Serve with sauce.
