Crispy Vegetable Lavash Pizza

A brief prebake keeps thin lavash crisp beneath tomato, peppers, onion, and mozzarella. Because lavash browns quickly, the vegetables are sliced thinly and the cheese is measured rather than piled on.

Ingredients

  • 1 rectangular lavash flatbread, about 9 by 12 inches
  • 1 teaspoon olive oil
  • 1/3 cup thick pizza sauce
  • 1 cup shredded part-skim mozzarella
  • 1/3 medium green bell pepper, very thinly sliced
  • 1/4 small red onion, very thinly sliced
  • 1 small Roma tomato, seeded, diced, and blotted dry
  • 1/4 teaspoon dried oregano
  • Pinch of crushed red pepper, optional

Method

  1. Heat oven to 400°F with a rack in the lower third. Line the pan with parchment.
  2. Place lavash on the pan and brush lightly with oil, including the edges. Bake 3–4 minutes, until dry to the touch but still flexible.
  3. Spread sauce to within 1/2 inch of the edge. Add 3/4 cup mozzarella, then pepper, onion, and dry tomato. Finish with remaining cheese, oregano, and optional red pepper.
  4. Bake 6–8 minutes, until cheese bubbles and the edges are crisp. Confirm the center toppings reach 165°F.
  5. Rest 2 minutes and cut into four rectangles with kitchen shears or a pizza wheel.

Why the prebake matters

Lavash contains little internal crumb to absorb sauce, so an unbaked sheet can turn limp before the cheese melts. The short first bake removes surface moisture and creates a barrier. Thick pizza sauce is specified because watery marinara soaks through. Seeding and blotting the tomato is equally important.

Place vegetables beneath the final cheese so thin slices soften while remaining anchored. Thick pepper or onion pieces may stay raw during the short bake. Do not overload the center; excess topping traps steam and leaves the middle soft.

Troubleshooting and substitutions

If the edges brown before the cheese melts, cover only the exposed border with narrow foil strips. If the center is pale, move the pan one rack lower for the final minute. Whole-wheat lavash can replace plain lavash at the same dimensions. Yellow pepper can replace green, and provolone can replace up to half the mozzarella. Fresh mushrooms should be sautéed first to remove water.

Serving and storage

Serve immediately with salad. Four slices are the stated yield; additional toppings are separate. Refrigerate leftovers within 2 hours for up to 3 days. Reheat on a dry sheet pan at 375°F until the center reaches 165°F. A microwave softens lavash and is not recommended. Freeze fully cooled slices between parchment for up to 1 month.

Preparation sequence

Slice and dry all vegetables before the lavash enters the oven. Once the base is prebaked, topping should take less than two minutes so it does not cool and soften. Spread sauce with the back of a spoon in a thin, even film. Keep the heaviest ingredients away from the very center, where steam escapes least efficiently.
