Black-Eyed Pea and Avocado Cowboy Caviar

Black-Eyed Pea and Avocado Cowboy Caviar

This fresh cowboy caviar variation combines black-eyed peas with cucumber, tomatoes, scallions, and avocado. The avocado is folded in shortly before serving so it keeps its shape, while a lemon-lime dressing adds brightness. Unlike a black-bean and corn version, this recipe emphasizes creamy avocado and crisp cucumber.

Recipe details

  • Yield: 6 servings, about 3/4 cup each
  • Prep time: 20 minutes
  • Chilling time: 20 minutes
  • Equipment: colander, cutting board, chef’s knife, large mixing bowl, small bowl, whisk, measuring cups and spoons

Ingredients

  • 2 cans (15 ounces each) black-eyed peas, drained and rinsed
  • 1 pint grape tomatoes, quartered
  • 1 medium English cucumber, diced
  • 4 scallions, thinly sliced
  • 1/3 cup chopped fresh flat-leaf parsley
  • 1 medium ripe avocado, diced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 small garlic clove, finely grated
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Drain and rinse the black-eyed peas thoroughly. Let them stand in the colander for several minutes, then blot away excess moisture so the dressing is not diluted.
  2. Combine the black-eyed peas, tomatoes, cucumber, scallions, and parsley in a large mixing bowl.
  3. Whisk the lime juice, lemon juice, olive oil, garlic, cumin, salt, and black pepper in a small bowl.
  4. Pour the dressing over the pea mixture and fold gently to combine. Cover and refrigerate for 20 minutes.
  5. Dice the avocado just before serving. Fold it into the chilled mixture with a flexible spatula, taking care not to mash the pieces. Taste and adjust only with additional lemon or lime juice if desired.

Preparation tips and substitutions

English cucumber has thin skin and relatively few seeds, so it can be used without peeling. If using a standard cucumber, peel it and scrape out the watery seed section before dicing. Choose an avocado that yields slightly to gentle pressure but is not mushy. Cutting it at the last minute limits browning.

Cilantro can replace the parsley, and all lime or all lemon juice can be used if only one citrus fruit is available. Cannellini beans may replace the black-eyed peas, but that changes the character of the recipe. Do not add the avocado before a long chilling period because its texture and color decline with time.

Serving and storage

Serve the mixture as a dip, a salad, or a topping for cooked grains. Use a clean serving spoon and keep it refrigerated until serving. Do not leave it at room temperature for more than 2 hours, or more than 1 hour above 90°F.

Transfer leftovers promptly to a covered container and refrigerate for up to 2 days. Press a piece of food-safe wrap directly against the surface to slow avocado browning. Stir gently before serving. Freezing is not recommended because cucumber and avocado become watery and soft after thawing.

This black-eyed-pea recipe is intentionally separate from the black-bean and corn version. Its ingredients, texture, dressing balance, and storage window are different, allowing both articles to answer different reader needs without duplicating the same formula.
