Crust

  • 1 cup graham cracker crumbs (or digestive biscuits, crushed)

Filling

  • 8 oz (225g) fat-free cream cheese, softened
  • 1 cup nonfat Greek yogurt
  • ½ cup powdered sweetener (like erythritol or stevia blend)
  • 1 tsp vanilla extract
  • 1 packet sugar-free vanilla pudding mix (for structure)
  • ½ cup unsweetened almond milk

🥄 Instructions

  1. Make crust
    • Mix crumbs + melted light butter (or applesauce).
    • Press into pie dish.
    • Chill for 15–20 minutes.
  2. Make filling
    • Beat cream cheese until smooth.
    • Add yogurt, sweetener, vanilla.
    • Mix pudding mix + almond milk separately, then combine.
    • Beat until thick and creamy.
  3. Assemble
    • Spread filling over crust.
