WW Hatch Chile Relleno Grilled Cheese

Points: 3–4 WW points (depends on bread & cheese choices)

Ingredients

  • 2 slices 647 bread (or other low-point light bread)
  • 1 large Hatch green chile, roasted & peeled
  • 2 slices fat-free American cheese
  • 1 tbsp fat-free shredded mozzarella (optional but adds melt)
  • Cooking spray
  • Pinch garlic powder (optional)
  • Salt & pepper to taste

Instructions

  1. Lightly spray a nonstick skillet and heat over medium-low.
  2. Lay down one slice of bread. Add fat-free cheese slices.
  3. Place the roasted Hatch chile on top (pat dry so it’s not watery).
  4. Sprinkle mozzarella and seasoning if using.
  5. Top with second slice of bread.
  6. Cook slowly, flipping once, until bread is golden and cheese is melted.
