Ingredients

  • 3 medium very ripe bananas, peeled (about 345 grams)
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (100 grams) old-fashioned rolled oats
  • 1/4 cup (21 grams) natural unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • 1/2 teaspoon ground cinnamon

Method

  1. Heat the oven to 375°F. Spray the pan and line the bottom and two sides with parchment.
  2. Blend oats until they resemble coarse flour. Whisk with cocoa, baking powder, salt, and cinnamon.
  3. Mash bananas until nearly smooth. Whisk in eggs and vanilla. Fold in the dry mixture only until no cocoa streaks remain.
  4. Spread evenly in the pan. Bake 22–27 minutes, until the center springs back, a pick shows no wet batter, and the center reaches at least 160°F.
  5. Cool 10 minutes in the pan, lift onto a rack, and cool fully. Cut into four rows each way for 16 slices.

Ingredient function and troubleshooting

Bananas provide sweetness, moisture, and some binding, but eggs create most of the structure. Use bananas covered with brown speckles; firm yellow fruit produces a less sweet, drier bake. Natural cocoa is specified. Do not pack it into the cup, because excess cocoa can make the slices chalky.

If the center dips, it was likely removed before the egg structure set or the batter was overblended. Check temperature in the center without touching the pan. A wet streak on the pick means more baking is required; a moist crumb is acceptable. Cool fully before cutting because warm banana crumb is fragile.

Serving and substitutions

Serve a slice with plain yogurt or berries. Those additions are separate from the recipe. Quick oats can replace old-fashioned oats by weight and still should be ground. Weigh and grind the oats in advance, but keep the dry mixture covered until baking. Mash the bananas immediately before mixing so they do not darken excessively. To portion the cooled slab accurately, mark the midpoint of each edge first, then divide each half again. This produces 16 similarly sized pieces without relying on guesswork.
