WW Green Chile Hamburger Helper (Low-Point)

Ingredients

  • 1 lb 99% lean ground turkey (or 96% lean beef)
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup diced green chiles (canned, drained)
  • 2 cups fat-free beef or chicken broth
  • 1 cup water
  • 1½ cups cooked protein pasta (Fiber Gourmet or chickpea pasta works great)
  • ½ cup fat-free plain Greek yogurt
  • ¼ cup fat-free shredded cheddar (optional)
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt & pepper to taste

Instructions

  1. Brown the ground turkey (or beef) with onion and garlic in a non-stick skillet.
  2. Stir in green chiles, broth, water, chili powder, cumin, salt & pepper.
  3. Add cooked pasta and simmer 3–5 minutes until everything is heated through.
  4. Remove from heat and stir in Greek yogurt until creamy.
  5. Top with fat-free cheddar if using.
