Cocoa Applesauce Brownies

These cocoa applesauce brownies are mixed in one bowl and baked in an 8-inch square pan. Unsweetened applesauce supplies moisture, egg whites provide structure, and cocoa gives the bars their chocolate flavor. Because this batter contains little added fat, accurate measuring and an early doneness check help preserve a soft center. Cool the slab completely before cutting so the 16 small squares hold clean edges.

Method

  1. Heat the oven to 350°F (175°C). Line an 8-inch square metal pan with parchment, leaving two overhanging sides, and coat the paper lightly with nonstick spray.
  2. Whisk the flour, cocoa, granulated sweetener, baking powder, and salt in a medium bowl. Break up every visible cocoa lump so the finished brownies do not contain bitter pockets.
  3. Add the egg whites, applesauce, and vanilla. Fold with a flexible spatula, scraping the bottom and corners, just until no dry flour remains. The batter should be thick but spreadable. If it is stiff enough to crumble, add milk one tablespoon at a time; different cup-for-cup sweeteners absorb moisture differently.
  4. Spread the batter into an even layer, making sure it reaches the corners. Bake for 20–25 minutes. Begin checking at 20 minutes. The edges should be firm, the center should look set rather than glossy, and a toothpick should emerge with a few moist crumbs but no liquid batter.
  5. Cool in the pan for 15 minutes, then lift the slab onto a rack. Cool completely before cutting four rows by four rows.

Ingredient notes and troubleshooting

Use unsweetened applesauce, not chunky apple pie filling. Natural cocoa and Dutch-process cocoa both work here, although their flavors differ. A granulated baking sweetener that replaces sugar by volume is important; concentrated packets cannot be measured with the same cup amount. Follow the sweetener package if its conversion differs.

A dry, cakey result usually comes from packed flour or too much baking time. Spoon flour into the measuring cup and level it, or use the gram weight. If the center remains liquid while the edges darken, lower the pan one rack and cover the perimeter loosely with foil. The brownies continue setting as they cool, so do not wait for a completely dry toothpick.

Variations and storage

Fold in 1/4 cup chopped walnuts or chocolate chips after the batter is mixed, if desired. Espresso powder can deepen the cocoa flavor; use no more than 1/2 teaspoon. Store cooled brownies airtight at room temperature for 2 days or refrigerate for up to 5 days. Freeze separated by parchment for up to 2 months and thaw covered so condensation stays off the surface.
