Chocolate Banana Nice Cream

Chocolate Banana Nice Cream

Yield: 4 servings
Equipment: food processor, spatula, freezer-safe 1-quart container
Time and setting: 10 minutes; optional 2-hour firming

Ingredients

  • 4 medium ripe bananas, sliced and frozen
  • 1/4 cup unsweetened cocoa
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 2 tablespoons chopped dark chocolate, optional

Method

  1. Add frozen banana, cocoa, milk, vanilla, and salt to food processor.
  2. Process 2–3 minutes, stopping to scrape, until smooth and creamy. Add milk only 1 tablespoon at a time if blades stall.
  3. Fold in chocolate if using. Serve soft immediately or transfer to container.
  4. For firm scoops, cover surface and freeze 2 hours; stand 5 minutes before scooping.

Preparation notes

Read the method, prepare equipment, and arrange ingredients in order. Divide evenly and preserve all rest or chilling time.

Substitutions

Unsweetened soy or dairy milk works. Add 2 tablespoons peanut butter for a measured variation.

Storage and safety

Keep frozen at 0°F up to 1 week. Do not refreeze after complete melting.

Choosing and freezing bananas

Use ripe bananas with brown speckles for sweetness and enough softness to process smoothly. Slice them about 1/2 inch thick, freeze in one layer until solid, then transfer to a container. Large frozen chunks make the processor labor and can leave icy pieces. Bananas frozen while underripe create a starchier, less sweet dessert that extra cocoa can make bitter.

Processor stages

The mixture first looks crumbly, then gathers into clumps, and finally becomes creamy. Stop and scrape after each stage rather than pouring in all the milk. Add milk only by the tablespoon; excess liquid turns the dessert into a smoothie. Cocoa should disappear completely with no dry streaks. A pinch of salt and vanilla round out cocoa’s bitterness without requiring an unsupported sweetness claim.

Soft-serve and firm texture

Serve immediately for soft-serve consistency. For scoops, spread into a shallow container, press wrap against the surface, and freeze two hours. A long overnight freeze makes banana dessert harder; stand it at room temperature 5–10 minutes before scooping. Once fully melted, its ice crystals and food-handling history make refreezing unsuitable. Freeze leftovers promptly rather than repeatedly softening the whole container.

Service notes

A wide processor bowl works better than a narrow blender because frozen fruit can circulate without much liquid. Pulse first to break slices, then run continuously. If the blade spins beneath a frozen mass, stop the motor and redistribute with a spatula—never insert a utensil while it runs. Serve in chilled bowls to slow melting, with chopped nuts offered separately.

Prechill the serving scoop and bowls for 10 minutes. Cocoa intensity increases as the dessert freezes, so taste the soft base before adding any optional cocoa and measure additions by the teaspoon.
