Weight Watchers Salad

đź›’ Ingredients
• 2 cups imitation crab meat (flaked or chopped)
• ½ cup plain nonfat Greek yogurt
• 2 Tbsp light mayo
• ½ cup finely chopped celery
• ½ cup chopped cucumber (seeds removed if watery)
• 2 Tbsp finely chopped onion (optional)
• 1 Tbsp fresh lemon juice
• 1–2 Tbsp fresh dill or parsley, chopped
• Salt & black pepper to taste

👩‍🍳 Instructions

  1. In a large bowl, combine Greek yogurt, light mayo, lemon juice, herbs, salt, and pepper.
  2. Add the chopped seafood, celery, cucumber, and onion.
  3. Gently fold everything together until well coated.
  4. Cover and refrigerate for at least 30–60 minutes to let flavors blend.
  5. Serve chilled on its own, over lettuce, in a wrap, or as a sandwich filling.

• Add a squeeze of extra lemon for brightness
• For more crunch, toss in diced bell pepper
• Best made ahead — flavor improves after chilling
• Keep portions measured to maintain low points
