Weight Watchers Salad
đź›’ Ingredients
• 2 cups imitation crab meat (flaked or chopped)
• ½ cup plain nonfat Greek yogurt
• 2 Tbsp light mayo
• ½ cup finely chopped celery
• ½ cup chopped cucumber (seeds removed if watery)
• 2 Tbsp finely chopped onion (optional)
• 1 Tbsp fresh lemon juice
• 1–2 Tbsp fresh dill or parsley, chopped
• Salt & black pepper to taste
👩‍🍳 Instructions
- In a large bowl, combine Greek yogurt, light mayo, lemon juice, herbs, salt, and pepper.
- Add the chopped seafood, celery, cucumber, and onion.
- Gently fold everything together until well coated.
- Cover and refrigerate for at least 30–60 minutes to let flavors blend.
- Serve chilled on its own, over lettuce, in a wrap, or as a sandwich filling.

• For more crunch, toss in diced bell pepper
