  • 2 pounds orange-fleshed sweet potatoes
  • 2 tablespoons olive oil

Equipment

Use a vegetable brush or peeler, sturdy cutting board, sharp chef’s knife, large bowl, rimmed sheet pan, flexible spatula, fork, and serving bowl. A light-colored metal pan gives more predictable browning than dark nonstick metal.

Method

  1. Heat the oven to 425°F/220°C with a rack in the upper-middle position. Scrub and dry the sweet potatoes; peel them if desired.
  2. Cut the potatoes into even 3/4-inch cubes. Toss with olive oil, paprika, rosemary, garlic powder, salt, and pepper until every surface is lightly coated.
  3. Spread the cubes on the sheet pan in one layer, leaving small gaps. Roast for 15 minutes without disturbing them.
  4. Turn the cubes with a spatula and rotate the pan. Roast another 10 to 17 minutes, until browned at several edges and easily pierced through the center with a fork.
  5. Transfer to a bowl, toss gently with lemon juice, and add parsley. Taste and adjust salt only after the lemon is mixed in.

Cues and troubleshooting

Dry potatoes brown better than damp ones, and consistent cubes finish together. If they look pale and wet, the pan is crowded; divide the batch between two pans and rotate them halfway through. Very dark edges with hard centers indicate pieces that are too large or an oven running hot. Lower the temperature slightly and continue until tender. Turn gently once so softened cubes do not break apart.

Substitutions

Use thyme or ground cumin instead of rosemary. Regular paprika works in place of smoked paprika. Lime juice can replace lemon, and cilantro can replace parsley. Purple or white sweet potatoes may be used, but their drier texture can require a few extra minutes. For a warmer flavor, add 1/4 teaspoon ground cinnamon; for mild heat, add a pinch of cayenne.

Storage and safety

Refrigerate cooled potatoes in a shallow airtight container within two hours and use within four days. Reheat on a sheet pan at 400°F/200°C until steaming hot and crisp at the edges. Freeze for up to two months, although thawed cubes will be softer. Use a stable board and sharp knife for the dense raw potatoes, keeping fingertips tucked away from the blade.
