- 1 whole pita, about 6 inches wide
- 1/4 cup thick pizza sauce
- 1/2 cup shredded low-moisture mozzarella
- 1/4 cup thinly sliced red bell pepper
- 1/4 cup thinly sliced cremini mushrooms
- 1 tablespoon finely chopped red onion
- 1/4 teaspoon dried oregano
- Pinch of red-pepper flakes, optional
- 1 teaspoon olive oil
Method
- Set the rack in the middle position and heat the toaster oven to 425°F on bake. Confirm that parchment is permitted by the appliance manual; otherwise lightly oil the bare tray.
- Place the pita on the prepared tray. Bake for 2 minutes to dry its surface, then remove the tray with oven mitts.
- Spread sauce to within 1/2 inch of the edge. Add mozzarella in an even layer, followed by bell pepper, mushrooms, onion, oregano, and optional pepper flakes. Drizzle with olive oil.
- Bake 6–9 minutes, rotating the tray once if the oven heats unevenly. The pizza is ready when the cheese is fully melted and bubbling in several places, the vegetables have softened, and the pita edge is crisp and browned.
- Rest 2 minutes on a cutting board. Cut into four wedges and serve two wedges per serving.

Thick sauce adds flavor without soaking the pita. Low-moisture mozzarella melts with less released water than fresh mozzarella. Thin vegetable slices cook in the short bake time; mushrooms placed above the cheese can release steam instead of trapping it against the crust. The brief pre-bake creates a moisture barrier and firms the base.
Troubleshooting
If the center bends, use less sauce or pat the vegetables dry. If the rim darkens before the cheese bubbles, lower the temperature to 400°F and continue baking. Toaster ovens have close heating elements, so inspect after 5 minutes and never leave the appliance unattended. Do not allow parchment to extend beyond the tray or touch an element. Broil only if the manufacturer permits it, and do not broil parchment.
Substitutions and storage
A same-size naan may replace the pita but usually needs no pre-bake. Provolone can replace mozzarella in the same amount. Zucchini works in place of mushrooms if sliced paper-thin and blotted dry. Watery fresh mozzarella and large raw vegetable chunks are not direct swaps.
Refrigerate leftovers within 2 hours in a covered container for up to 3 days. Reheat at 375°F until the cheese and center reach 165°F, about 4–6 minutes. Do not store or reheat pizza in its used parchment if the sheet is scorched.
