Ingredients (makes about 24 pinwheels):

  • 2 cups fat-free cream cheese, softened
  • 1 cup dill pickles, finely chopped (Claussen works great)
  • 1 cup lean diced ham
  • 1 packet ranch seasoning mix
  • ½ cup reduced-fat shredded cheddar cheese
  • 4 low-carb or light tortillas
  • Optional: chopped green onions for extra flavor

Instructions

  1. In a large bowl, mix the softened fat-free cream cheese and ranch seasoning until smooth.
  2. Stir in the chopped pickles, diced ham, and reduced-fat shredded cheese.
  3. Spread the mixture evenly over each tortilla.
  4. Roll tortillas tightly into logs.
  5. Wrap and refrigerate for about 30–60 minutes to help them firm up.
  6. Slice into 1-inch pinwheels and serve.
