Ingredients

- 1/3 cup granulated sugar substitute (like Swerve or Monkfruit)
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp unsweetened applesauce (keeps them soft + reduces points)
For the Low-Point Frosting
- 1/2 cup plain nonfat Greek yogurt
- 2 tbsp sugar-free powdered sweetener (Swerve/Monkfruit)
- 1/2 tsp vanilla extract
- Optional: a few drops food coloring
- Optional: light Christmas sprinkles (very small amount—adds ~0 points if used lightly)

Instructions
1️⃣ Make the Dough
- Preheat oven to 350°F (175°C).
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, beat light butter and sweetener until fluffy.
- Add egg, vanilla, and applesauce. Mix well.
- Add dry mixture into wet mixture. Stir to form cookie dough.
- Chill dough 20–30 minutes (helps shape cookies).
2️⃣ Shape & Bake
- Roll small balls (about 20).
- Place on a baking sheet lined with parchment.
- Flatten tops gently with your fingers.
- Bake 8–9 minutes, until edges are lightly golden.
- Cool completely before frosting.
3️⃣ Make the Frosting
- Mix Greek yogurt, powdered sweetener, and vanilla.
- Add food coloring if desired.
- Spread a thin layer over cooled cookies.
- Add a pinch of sprinkles (optional).
