Weight Watchers American Goulash

This dish looks like American Goulash (beef, macaroni, tomato sauce). Here is a lighter Weight Watchers–friendly version you can use for your post.

Points: about 4–5 WW points per serving (depending on your plan)

Ingredients

  • 1 lb 96% lean ground beef
  • 1 cup uncooked elbow macaroni
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth (fat-free)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. In a large pot, cook the lean ground beef over medium heat until browned. Drain any excess liquid.
  2. Add onion and garlic and cook for 2–3 minutes until softened.
  3. Stir in diced tomatoes, tomato sauce, beef broth, paprika, and Italian seasoning.
  4. Add the uncooked macaroni and mix well.
  5. Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender.
  6. Season with salt and pepper, garnish with parsley, and serve warm.

Optional (still low points)

  • Sprinkle 1 tbsp reduced-fat shredded cheese on top (+1 point).
