Strawberry Delight Dessert

Strawberry delight is a layered refrigerator dessert with a compact graham base, tangy cream cheese filling, and a fresh strawberry topping. Cooking the berries briefly concentrates their flavor while cornstarch gives the topping enough body to stay on each square. Allow every cooked component to cool before layering so the filling remains light.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 12 ounces strawberries, hulled and diced
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 8 ounces block cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cold heavy whipping cream

Method

  1. Line the pan with parchment, leaving two overhanging sides. Stir the crumbs, melted butter, and 2 tablespoons sugar until evenly moistened. Press into a firm, level base and refrigerate.
  2. Combine the strawberries, 1/3 cup sugar, and lemon juice in a saucepan. Cook over medium heat for 4 minutes, stirring gently. Mix cornstarch with cold water, stir it into the berries, and simmer for 1 to 2 minutes until glossy and thickened. Transfer to a shallow bowl and cool completely.
  3. Beat cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip the cold cream to firm peaks. Fold it into the cream cheese mixture in two additions.
  4. Spread the filling over the crust, reaching every corner. Spoon the cooled strawberry mixture over the filling. Cover and refrigerate at least 4 hours before lifting out and cutting into 9 squares.

Layering cues

Pack the crust with the flat bottom of a measuring cup; loose crumbs make the first pieces difficult to lift. The strawberry topping is ready when a spatula drawn across the pan leaves a path for a second before it closes. If it is still watery, simmer briefly; if cooked too long, the fruit can become jamlike. Cooling it in a shallow dish prevents residual heat from softening the cream layer.

Softened block cream cheese blends more cleanly than cold cheese or tub-style spread. Stop whipping the cream when the peaks stand upright. Grainy, clumped cream has been overwhipped and will not fold smoothly.

Variations and storage

Raspberries may replace up to half of the strawberries. For a brighter topping, add 1 teaspoon finely grated lemon zest with the juice. Chocolate graham crumbs can be used in the same amount for a cocoa base. Frozen berries release more liquid and are not a direct substitute unless their sauce is cooked down to the same thick consistency.

Keep the dessert covered and refrigerated at 40°F/4°C or colder. Serve within 3 days, because the berry layer gradually softens the crust. Return leftovers to the refrigerator within 2 hours. Freezing is not recommended: thawed strawberries weep and the dairy layer may become grainy.
