These Skinny Mint Chocolate Brownies are a cake-like brownie-super easy to make-with only 4 ingredients! These will curb any sweet tooth! Serve them with a bowl of light ice cream or top with some whip cream for an easy and delicious dessert!

Ingredients

  • 1 box (16 oz) Pillsbury Sugar Free Devil’s Food Cake Mix
  • 1/2 cup unsweetened applesauce
  • dash of peppermint extract
  • 3 large eggs or 3/4 cup liquid egg substitute
  • 1/2 cup water

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a 9×9 baking dish with non stick cooking spray. (You can use a 9×13 dish the brownie will be thinner and not as thick if you do.)
  3. In a large mixing bowl combine, dry cake mix, eggs, unsweetened applesauce, water, and extract.
  4. Stir until fully combined.
  5. Spread brownie batter into prepared pan.
  6. Bake for 25-28 minutes.

Notes

  1. You can omit the mint extract all together to make plain chocolate brownies.
  2. Be aware the peppermint extract can be pretty potent so you’ll not want to add any more than a 1/4 teaspoon.
  3. If you prefer fudge like brownies you will want to use 2 eggs and the sugar free brownie mix as the base. 
  4. If you prefer thick, cake like brownies you will want to use 3 eggs and the sugar free devil’s food cake mix as the base.
