Frozen Strawberry Shortcake Yogurt Bars

Frozen Strawberry Shortcake Yogurt Bars

Yield: 12 bars
Equipment: 8-inch square pan, parchment, bowls, spatula
Time and setting: 20 minutes plus 4 hours freezing

Ingredients

  • 1 1/2 cups graham crumbs
  • 5 tablespoons melted butter
  • 2 cups whole-milk Greek yogurt
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1 1/2 cups diced strawberries, patted dry

Method

  1. Line pan with parchment. Mix crumbs and butter; press evenly and freeze 10 minutes.
  2. Stir yogurt, honey, and vanilla until smooth. Fold in one cup strawberries.
  3. Spread over crust and add remaining berries, pressing lightly.
  4. Freeze at least four hours. Lift out, stand five minutes, and cut 12 bars.

Technique, cues, and troubleshooting

Press the crumb layer with a flat cup, but not so hard that it becomes difficult to bite when frozen. Whole-milk Greek yogurt limits iciness; thin regular yogurt releases more water. Strawberries must be dry and diced small for clean cuts. Warm a sharp knife under hot water, dry it, and wipe between cuts. For a softer bar, stand only the portion being served rather than thawing the full pan. Blueberries can replace strawberries. Maple syrup can replace honey, though the base may freeze slightly firmer.

Storage and safety

Keep frozen at 0°F up to one month. Do not refreeze bars that have fully thawed. Transport in an insulated frozen-food carrier.

Serving and preparation

Measure portions against the stated yield and keep ingredient states exactly as listed. Prepare any optional garnish separately so it does not change the base texture. Label leftovers with the preparation date, follow the storage limit, and check packaged ingredients for allergens before serving.

Detailed preparation and serving cues

Line the pan in both directions if easy removal is important, smoothing parchment tightly into corners. Chill the pressed crust before adding yogurt so crumbs do not lift into the filling. Stir honey completely into yogurt before berries are folded; streaks of concentrated honey freeze softer than the rest. Spread filling with an offset spatula and press surface berries only halfway in, which keeps them attached while visible. After four hours, the slab should feel firm through the center. Lift by parchment and place on a stable board. A hot, dry knife makes the cleanest cuts, but wipe away melted yogurt between passes. Divide first into four strips, then three bars per strip. Return unused bars to the freezer immediately. Serve with fresh strawberry slices only after plating, since stored fresh fruit becomes icy.

If parchment freezes against the sides, warm only the outside of the metal pan briefly with a towel dipped in warm water. Do not run water over the dessert. Store cut bars between parchment layers so their strawberry surfaces do not freeze together.

Serve every bar thoroughly frozen.
