Peanut Butter Banana Oat Muffins
These muffins combine ripe banana, peanut butter, oats, and whole-wheat flour in a sturdy breakfast-sized bake. The banana should be heavily speckled and soft enough to mash smoothly; underripe fruit is less sweet and contributes less moisture. A small amount of brown sugar keeps the flavor balanced rather than relying on an unpredictable banana alone.

Use a standard 12-well metal muffin pan, paper liners or nonstick spray, two mixing bowls, a whisk, a flexible spatula, a 1/4-cup scoop, and an instant-read thermometer or wooden pick.
Ingredients
- 1 cup (120 g) whole-wheat flour, spooned and leveled
- 3/4 cup (68 g) old-fashioned rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon fine salt
- 1 cup (230 g) mashed very ripe banana, from about 2 large peeled bananas
- 1/2 cup (128 g) smooth conventional peanut butter, well stirred
- 1/3 cup (70 g) packed light brown sugar
- 2 large eggs, at room temperature
- 1/2 cup (120 ml) whole or 2% milk, at room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons (18 g) old-fashioned rolled oats, for topping
Method
- Heat the oven to 375°F with a rack in the center. Line all 12 wells of the muffin pan or coat them evenly with nonstick spray.
- In a medium bowl, whisk the flour, 3/4 cup oats, baking powder, baking soda, cinnamon, and salt. Break up any lumps of baking soda.
- In a large bowl, whisk the mashed banana, peanut butter, brown sugar, eggs, milk, and vanilla until the eggs are fully incorporated. Small flecks of banana are fine, but no streaks of egg should remain.
- Add the dry ingredients to the banana mixture. Fold just until the flour disappears. Let the batter stand for 5 minutes so the oats can hydrate; do not add extra liquid during this rest.
- Divide the batter equally among 12 wells, using about 1/4 cup per well. Sprinkle the remaining 2 tablespoons oats over the tops.
- Bake for 17 to 21 minutes, rotating the pan front to back after 12 minutes. The muffins are done when the tops spring back, a pick comes out without wet batter, and the center of a middle muffin reaches at least 160°F. Cool in the pan for 5 minutes, then move the muffins to a rack.
Storage and substitutions
Cool completely before packing so trapped steam does not make the tops sticky. Store in an airtight container at room temperature for 1 day or refrigerate at 40°F or below for up to 4 days. Freeze in a sealed freezer bag for up to 2 months. Thaw overnight in the refrigerator or microwave one muffin until warm throughout.
For a nut-free version, use a conventional no-stir sunflower-seed spread in the same amount; it may turn harmlessly green after baking because of a reaction with baking soda. Quick oats may replace rolled oats by weight, producing a finer crumb. All-purpose flour may replace whole-wheat flour one-for-one by weight. Unsweetened soy milk can replace dairy milk. Natural runny peanut butter is not recommended because oil separation can change the structure.
