Peanut Buster Parfait

Ingredients

  • ½ cup Nick’s Vanilla Light Ice Cream
  • 2 tbsp sugar-free hot fudge syrup
  • 1 tbsp PB2 Powder, mixed with 1 tbsp water
  • 1 tbsp dry roasted peanuts, chopped
  • Optional: Light whipped topping

Instructions

  1. Spoon half of the vanilla light ice cream into a parfait glass or small bowl.
  2. Drizzle with 1 tablespoon of sugar-free hot fudge.
  3. Add the prepared PB2 mixture.
  4. Top with the remaining ice cream.
  5. Drizzle the remaining hot fudge over the top.
  6. Sprinkle with chopped peanuts.
  7. Add a dollop of light whipped topping if desired and enjoy immediately.
