Mexican White Trash Casserole

Ingredients
- 1 lb 99% lean ground turkey or chicken
- 1 packet taco seasoning (low-sodium or homemade)
- 1 can (15 oz) black beans, drained & rinsed
- 1 can (10 oz) Rotel tomatoes with green chiles
- 1 cup fat-free Greek yogurt
- 1 cup fat-free cottage cheese
- 1 cup fat-free shredded cheddar or Mexican-blend cheese
- 1 cup frozen corn (optional)
- 3 cups crushed baked tortilla chips OR 2 cups cooked brown rice
- Cooking spray
👩🍳 Instructions
- Preheat oven to 375°F (190°C).
- Brown turkey in a skillet, drain if needed. Add taco seasoning and a splash of water.
- Stir in beans, Rotel, corn, Greek yogurt, and cottage cheese.
- Lightly spray a baking dish. Add crushed chips (or rice) as the base.
- Spread meat mixture over top.
- Sprinkle cheese evenly.
- Bake 25–30 minutes until bubbly and lightly golden.
