Meatballs

  • 1 lb extra-lean ground turkey (99% fat free)
  • 1 egg white
  • ยผ cup fat-free Italian breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt & pepper

Casserole

  • 2 cups marinara sauce (no sugar added)
  • 1ยฝ cups steamed cauliflower florets or zucchini slices
  • ยพ cup fat-free shredded mozzarella
  • ยผ cup fat-free grated parmesan
  • Fresh parsley (optional)

  1. Preheat oven to 375ยฐF (190ยฐC)
  2. Mix all meatball ingredients and form small balls
  3. Bake meatballs on lined tray for 15 minutes
  4. In baking dish, add veggies + marinara sauce
  5. Add cooked meatballs and stir gently
  6. Sprinkle mozzarella and parmesan on top
  7. Bake uncovered 20 minutes until bubbly
  8. Garnish with parsley and serve
