🧾 Ingredients
Meatballs
- 1 lb extra-lean ground turkey (99% fat free)
- 1 egg white
- ¼ cup fat-free Italian breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- Salt & pepper
Casserole
- 2 cups marinara sauce (no sugar added)
- 1½ cups steamed cauliflower florets or zucchini slices
- ¾ cup fat-free shredded mozzarella
- ¼ cup fat-free grated parmesan
- Fresh parsley (optional)
👩🍳 Instructions
- Preheat oven to 375°F (190°C)
- Mix all meatball ingredients and form small balls
- Bake meatballs on lined tray for 15 minutes
- In baking dish, add veggies + marinara sauce
- Add cooked meatballs and stir gently
- Sprinkle mozzarella and parmesan on top
- Bake uncovered 20 minutes until bubbly
- Garnish with parsley and serve
