Cream Cheese Cranberry Loaf

Ingredients
- 1 cup fresh or frozen cranberries
- 1 cup oat flour (or blended oats)
- ½ cup plain non-fat Greek yogurt
- 2 tbsp light cream cheese, softened
- 2 eggs
- ⅓ cup zero-calorie sweetener (monk fruit/erythritol or similar)
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- ¼ cup unsweetened almond milk
Optional Light Cream Cheese Drizzle (adds ~1 point)
- 1 tbsp light cream cheese
- 1–2 tbsp almond milk
- 1 tsp sweetener
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment.
- In a bowl whisk eggs, yogurt, cream cheese, sweetener, vanilla, and almond milk until smooth.
- Stir in oat flour, baking powder, baking soda, and salt.
- Fold in cranberries.
- Pour into the loaf pan and bake 35–40 minutes until a toothpick comes out clean.
- Cool completely before slicing. Drizzle with the light cream cheese topping if desired.

💡 Tip: If you want the loaf even lower points (2 points per slice), reduce the cream cheese to 1 tbsp and skip the drizzle.
