Cottage cheese scrambled eggs

0 points Someone on here posted about boiled eggs with cottage cheese. I’m not a fan of cottage cheese substitutions, but in the eggs with the mustard it worked. Say hello to your new favorite upgrade! Not only does a little cottage cheese lend more protein to simple scrambled eggs, it also gives them a luxuriously creamy texture.

Ingredients

  • Cooking spray
  • 2 spray s
  • Egg
  • 2 item s, large
  • Table salt
  • 1 pinch es, or to taste
  • Black pepper
  • 1 pinch es, or to taste
  • Fat free cottage cheese
  • 1/4 cup
  • A healthy squirt of mustard.

Instructions

  1. Coat a small nonstick skillet with cooking spray and heat over medium-low. In a medium bowl, whisk together the eggs, salt, pepper, and cottage cheese. Add the egg mixture to the pan; cook, stirring constantly, until scrambled to your desired doneness, 2 to 3 minutes.
  2. Serving size: about ½ cup
  3. I added a little Arugula and grape tomatoes and 1 sliced up olive to give a little texture and flavor, but this is a high volume low point meal that I can get behind and you could really add any fresh veggies you have.
