  • 1 tsp vanilla extract
  • 35 chocolate chips use lilys chips sugar-free or dark chocolate for fewer points
  • 1/4 cup plain nonfat Greek yogurt
  • 1/4 tsp salt

  2. Preheat oven: Set your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray with nonstick cooking spray.
  3. Mix wet ingredients: In a bowl, combine applesauce, eggs, yogurt, and vanilla extract. Mix until smooth.
  4. Combine dry ingredients: In another bowl, whisk together the flour, brown sugar substitute, and salt.
  5. Combine wet and dry: Slowly fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  6. Add chocolate chips: Gently fold in the mini chocolate chips.
  7. Portion batter: Divide the batter evenly among the 12 muffin cups.
  8. Bake: Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool: Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
