Makes 12 muffins
Ingredients
- 1 cup fat-free cottage cheese (0 Points)
- 3 large eggs (0 Points)
- 1 cup blended oats (about 3 cups dry oatmeal = points divided among muffins)
- 1 tsp baking powder
- 1 tsp vanilla extract
- Sweetener of choice (monk fruit, stevia, Splenda) (0 Points)
- 1 cup fresh blueberries (0 Points)
Instructions
- Blend cottage cheese, eggs, oats, baking powder, vanilla, and sweetener until smooth.
- Fold in blueberries.
- Divide into a 12-cup muffin tin sprayed with nonstick spray.
- Bake at 350°F (175°C) for 20-25 minutes until golden.
- Cool before serving.
