🫐 0-1 Point Blueberry Protein Muffins

Makes 12 muffins

Ingredients

  • 1 cup fat-free cottage cheese (0 Points)
  • 3 large eggs (0 Points)
  • 1 cup blended oats (about 3 cups dry oatmeal = points divided among muffins)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Sweetener of choice (monk fruit, stevia, Splenda) (0 Points)
  • 1 cup fresh blueberries (0 Points)

Instructions

  1. Blend cottage cheese, eggs, oats, baking powder, vanilla, and sweetener until smooth.
  2. Fold in blueberries.
  3. Divide into a 12-cup muffin tin sprayed with nonstick spray.
  4. Bake at 350°F (175°C) for 20-25 minutes until golden.
  5. Cool before serving.

  • If using 1 cup oats total: approximately 1 Point per muffin.
  • For even lower points, use ¾ cup oats and make 12 muffins. They may still calculate to 0-1 Point each depending on your WW plan.
  • Avoid protein powder, sugar, honey, or chocolate chips if you’re trying to keep points as low as possible.
