Weight Watchers Coconut Chocolate Cookie Clusters
Low Point Version 🍫🥥
Chewy toasted coconut, melty chocolate chips, and a sweet creamy base — but made WW-friendly and much lighter 🙌
These little cookie clusters taste rich and indulgent while staying low in points. Perfect for dessert, snack prep, or when you need something sweet without ruining your day 🤍
Ingredients
- 2 cups unsweetened shredded coconut
- 1/3 cup powdered peanut butter (PB2 or similar)
- 1/4 cup sugar-free maple syrup
- 2 tbsp plain nonfat Greek yogurt
- 1 tsp vanilla extract
- 2 tbsp mini sugar-free chocolate chips
- 1 tbsp unsweetened almond milk (if needed for mixing)
- Pinch of salt
Optional Add-Ins
These add flavor without adding many points:
- Cinnamon
- Coconut extract
- Sugar-free caramel drizzle
- Crushed Fiber One brownie pieces
- A sprinkle of flaky salt on top
Instructions
1. Toast the Coconut
Add the shredded coconut to a nonstick skillet over medium-low heat.
Toast for about 4–5 minutes, stirring often, until lightly golden and fragrant.
Let cool slightly.
2. Make the Creamy Base
In a medium bowl combine:
- powdered peanut butter
- sugar-free syrup
- Greek yogurt
- vanilla
- pinch of salt
Mix until smooth and thick.
If mixture feels too dry, add 1 tbsp almond milk.
3. Add Coconut & Chocolate
Fold toasted coconut into the mixture.
Stir in half the chocolate chips.
4. Form the Clusters
Line a plate or tray with parchment paper.
Scoop small spoonfuls of mixture into clusters (about 1 tbsp each).
Top with remaining chocolate chips.
5. Chill
Place in refrigerator for 30–45 minutes until firm.
You can also freeze them for 15 minutes for a firmer texture.
