Weight Watchers Cheesy Chicken Fajita Casserole ๐ŸŒฎ๐Ÿง€

This cheesy chicken fajita casserole is creamy, loaded with flavor, and super filling without tons of points ๐Ÿ˜

Ingredients

  • 1 lb boneless skinless chicken breast, diced
  • 2 bell peppers, chopped
  • 1 small onion, sliced
  • 1 packet taco or fajita seasoning
  • 1 can Rotel tomatoes, drained
  • 1 cup fat-free Greek yogurt
  • 1/2 cup reduced-fat cream cheese
  • 1 cup reduced-fat Mexican cheese blend
  • 1 cup cooked high-protein pasta or hearts of palm noodles
  • Cooking spray

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Spray a casserole dish with nonstick spray.
  3. Cook chicken in a skillet until mostly done. Add peppers, onion, and fajita seasoning. Cook 5 minutes.
  4. Stir in Rotel, Greek yogurt, cream cheese, and pasta/noodles. Mix until creamy.
  5. Pour mixture into casserole dish.
  6. Top with shredded cheese.
  7. Bake for 20โ€“25 minutes until hot and bubbly.
  8. Broil 1โ€“2 minutes for a golden cheesy top if desired.
