The Best Low-Point Pineapple Banana Bread

🛒 Ingredients:

  • 2 ripe bananas (mashed)
  • 1 cup crushed pineapple in juice, drained well
  • 2 eggs (or 1 egg + 2 egg whites for lower points)
  • ½ cup unsweetened applesauce (replaces oil)
  • 1 tsp vanilla extract
  • 1 cup self-rising flour (or flour + baking powder)
  • ¼ cup zero-calorie sweetener (like erythritol/stevia blend)
  • 1 tsp cinnamon
  • Pinch of salt

Optional (adds slight points):

  • 1–2 tbsp chopped walnuts
  • Unsweetened coconut flakes (light sprinkle)

👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F).
    Line a loaf pan with parchment.
  2. In a bowl, mix:
    • Mashed bananas
    • Drained pineapple
    • Eggs
    • Applesauce
    • Vanilla
  3. In another bowl, combine:
    • Flour
    • Sweetener
    • Cinnamon
    • Salt
  4. Add dry ingredients into wet mixture and stir until just combined.
