Crust
- 1 cup graham cracker crumbs (or digestive biscuits, crushed)
- 2 tbsp light butter or 2 tbsp unsweetened applesauce (lower points option)
Filling
- 8 oz (225g) fat-free cream cheese, softened
- 1 cup nonfat Greek yogurt
- Β½ cup powdered sweetener (like erythritol or stevia blend)
- 1 tsp vanilla extract
- 1 packet sugar-free vanilla pudding mix (for structure)
- Β½ cup unsweetened almond milk
π₯ Instructions
- Make crust
- Mix crumbs + melted light butter (or applesauce).
- Press into pie dish.
- Chill for 15β20 minutes.
- Make filling
- Beat cream cheese until smooth.
- Add yogurt, sweetener, vanilla.
- Mix pudding mix + almond milk separately, then combine.
- Beat until thick and creamy.
- Assemble
- Spread filling over crust.
- Smooth top like in your photo π
- Chill
- Refrigerate at least 3β4 hours (overnight is best!)
- Add lemon juice β makes it like cheesecake π
- Top with berries (0 points boost!)
- Dust with cinnamon or cocoa powder
