Low Point Sweet Potato Recipe

WW Sweet Potato Magic  (Light & Flavor-Packed!)
~2–3 WW Points per serving (depending on olive oil amount)

You seriously

 Ingredients:

  • 4–5 medium sweet potatoes 
  • 1–2 tsp olive oil (2 points total — or use spray oil for 0 points)
  • Pink salt or kosher salt
  • Dried thyme
  • Optional: a pinch of garlic powder or smoked paprika

 Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Slice sweet potatoes crosswise into thick rounds.
  3. Toss or brush with olive oil (or spritz lightly to keep points low).
  4. Season with salt, dried thyme, and any extras you like.
  5. Place them cut-side down on a parchment-lined baking sheet.
  6. Bake for about 40 minutes, or until the bottoms are golden and caramelized.

Tips:

 Use cooking spray instead of olive oil → 0 points!
 Add a sprinkle of cinnamon for a sweet twist.
 Pairs perfectly with Greek yogurt dip or plain yogurt (also 0 points).
