🧾 Ingredients

Meatballs

  • 1 lb extra-lean ground turkey (99% fat free)
  • 1 egg white
  • ¼ cup fat-free Italian breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt & pepper

Casserole

  • 2 cups marinara sauce (no sugar added)
  • 1½ cups steamed cauliflower florets or zucchini slices
  • ¾ cup fat-free shredded mozzarella
  • ¼ cup fat-free grated parmesan
  • Fresh parsley (optional)

👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C)
  2. Mix all meatball ingredients and form small balls
  3. Bake meatballs on lined tray for 15 minutes
  4. In baking dish, add veggies + marinara sauce
  5. Add cooked meatballs and stir gently
  6. Sprinkle mozzarella and parmesan on top
  7. Bake uncovered 20 minutes until bubbly
  8. Garnish with parsley and serve
