pecan snowball cookies

Ingredients

  • 3 tbsp light butter (Land O’Lakes Light or similar), softened
  • 3 tbsp powdered sugar substitute (Swerve Confectioners or Monk Fruit)
  • 1 tsp vanilla extract
  • ⅔ cup all-purpose flour
  • ¼ cup finely chopped pecans
  • Pinch of salt
  • Optional: powdered sugar substitute for dusting (very light)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream light butter and powdered sugar substitute until smooth.
  3. Mix in vanilla.
  4. Add flour and salt, stir until dough forms.
  5. Fold in chopped pecans.
  6. Roll into 16 small balls and place on parchment-lined baking sheet.
  7. Bake 10–12 minutes until just set (do not brown).
  8. Cool completely.
  9. Optional: lightly dust with powdered sugar substitute for that “snowball” look ❄️

Tips to Keep Points LOW

  • Chop pecans very fine so you can use less
  • Skip the heavy coating of powdered sugar (classic look, but adds points)
  • Keep cookies small. Size matters here!
