Low-Point Cheeseburger Soup (WW-Friendly)

Ingredients (6 servings)

  • 1 lb 99% lean ground turkey (or extra-lean ground beef)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups diced potatoes (small cubes)
  • 2 cups chopped cauliflower (adds volume with fewer points)
  • 2 medium carrots, diced
  • 3 cups low-sodium chicken or beef broth
  • 1 cup unsweetened almond milk (or skim milk)
  • ½ cup non-fat plain Greek yogurt
  • ¾ cup reduced-fat shredded cheddar
  • 1 tbsp light cream cheese (optional, adds creaminess)
  • 1 tbsp ketchup (optional — adds cheeseburger flavor)
  • 1 tsp mustard
  • ½ tsp paprika
  • Salt & pepper to taste
  • Cooking spray

Instructions

  1. Spray a pot with cooking spray and brown the lean turkey over medium heat. Drain if needed.
  2. Add onion and garlic — cook 2–3 minutes until soft.
  3. Stir in potatoes, carrots, cauliflower, broth, paprika, salt & pepper.
  4. Cover and simmer 15–18 minutes until potatoes are tender.
  5. Lower heat. Stir in almond/skim milk and light cream cheese (if using).
  6. Slowly stir in cheddar until melted.
  7. Remove from heat and whisk in Greek yogurt so it stays creamy (don’t boil).
  8. Add ketchup + mustard for that classic cheeseburger taste.
  9. Taste and season — then serve warm!

  • Makes 6 servings — about 1 cup each
  • Swap potatoes for more cauliflower to drop points further
  • Using lean beef instead of turkey adds ~1–2 points per serving
  • Skip cream cheese if you want it ultra-light
