Low-Point Cheeseburger Soup (WW-Friendly)
Ingredients (6 servings)
- 1 lb 99% lean ground turkey (or extra-lean ground beef)
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups diced potatoes (small cubes)
- 2 cups chopped cauliflower (adds volume with fewer points)
- 2 medium carrots, diced
- 3 cups low-sodium chicken or beef broth
- 1 cup unsweetened almond milk (or skim milk)
- ½ cup non-fat plain Greek yogurt
- ¾ cup reduced-fat shredded cheddar
- 1 tbsp light cream cheese (optional, adds creaminess)
- 1 tbsp ketchup (optional — adds cheeseburger flavor)
- 1 tsp mustard
- ½ tsp paprika
- Salt & pepper to taste
- Cooking spray
Instructions
- Spray a pot with cooking spray and brown the lean turkey over medium heat. Drain if needed.
- Add onion and garlic — cook 2–3 minutes until soft.
- Stir in potatoes, carrots, cauliflower, broth, paprika, salt & pepper.
- Cover and simmer 15–18 minutes until potatoes are tender.
- Lower heat. Stir in almond/skim milk and light cream cheese (if using).
- Slowly stir in cheddar until melted.
- Remove from heat and whisk in Greek yogurt so it stays creamy (don’t boil).
- Add ketchup + mustard for that classic cheeseburger taste.
- Taste and season — then serve warm!

- Crumbled turkey bacon
- Green onions
Approx. WW Points:
- 0–2 points per cup on current plans (depends on your ground meat + cheese choices and serving size)
Tip: Use 99% lean ground turkey, fat-free Greek yogurt, and reduced-fat cheese to keep points low.
