French Dip Biscuits

Ingredients

  • 1 can reduced-fat refrigerated biscuit dough (8 biscuits)
  • 8 oz lean deli roast beef, sliced very thin (96–98% fat-free if possible)
  • 4 wedges Laughing Cow Light Swiss cheese (or ¾ cup shredded reduced-fat mozzarella)
  • 1 small onion, thinly sliced (optional but great flavor)
  • Cooking spray

Au Jus Dip (light version)

  • 2 cups reduced-sodium beef broth
  • 1 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
  2. Lightly sauté onions in a sprayed pan (optional) until soft.
  3. Flatten each biscuit slightly.
  4. Spread ½ wedge Laughing Cow (or ~1 tbsp cheese) on each biscuit.
  5. Add 1–1½ oz roast beef + a little onion.
  6. Fold biscuit edges over filling and pinch closed. Place seam-side down.
  7. Lightly mist tops with cooking spray.
  8. Bake 12–15 minutes until golden.

Make the Au Jus

  1. Add broth, Worcestershire, garlic powder, onion powder, and pepper to a small pot.
    Simmer 3–5 minutes.
  2. Serve biscuits warm with au jus for dipping.
