Low-Point Weight Watchers Lemon Bars (With Crust)

Makes 12 bars — 1 to 2 WW points each (depending on plan).

🔸 CRUST (low-point version)

  • 1 cup all-purpose flour
  • 3 tbsp light butter (like Land O’ Lakes Light) – melted
  • 2 tbsp unsweetened applesauce
  • 2 tbsp zero-cal sweetener (like monk fruit or allulose)
  • Pinch of salt
  • ½ tsp vanilla extract

🔸 FILLING

  • 3 large eggs
  • ½ cup lemon juice (fresh is best)
  • 2 tbsp lemon zest
  • ¾ cup zero-cal sweetener
  • 2 tbsp all-purpose flour
  • Pinch of salt
  • Optional: ½ tsp vanilla extract

INSTRUCTIONS

1️⃣ Make the crust

  1. Preheat oven to 350°F (175°C).
  2. Line an 8×8 pan with parchment.
  3. Mix flour, sweetener, melted light butter, applesauce, salt, and vanilla until crumbly.
  4. Press firmly & evenly into the pan.
  5. Bake 10–12 minutes, just until lightly set (not browned).

2️⃣ Make the filling

  1. Whisk eggs, lemon juice, zest, sweetener, flour, salt, and optional vanilla until smooth.
  2. Pour over hot crust.

3️⃣ Bake

  • Bake 18–22 minutes, until the center looks set and no longer jiggles.
  • Cool completely, then refrigerate at least 1 hour before cutting.

4️⃣ Optional topping

  • Dust lightly with zero-cal powdered sweetener.

LOW-POINT TIPS

  • Replace half the flour in crust with almond flour to reduce points further.
  • Use allulose to keep sweetness without extra points.
  • Cut into 16 mini squares for 1-point bites.
