Ingredients (Lightened & Low-Point)

Base Layer

  • 1 can fat-free refried beans
  • 1 cup fat-free Greek yogurt (instead of sour cream)
  • 1 tsp taco seasoning (low-sodium)

Cheese & Mix-ins

  • ½ cup low-fat shredded Mexican cheese (reduced-fat)
  • ½ cup fat-free mozzarella or cheddar (optional – keeps points very low)
  • 1 can diced green chiles (zero points)
  • 2 tbsp salsa or rotel (zero points)

Toppings (Optional, Zero-Point)

  • Chopped green onions
  • Jalapeño slices
  • Chopped tomatoes
  • Cilantro
  • A squeeze of lime

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix:
    • fat-free refried beans
    • fat-free Greek yogurt
    • taco seasoning
    • green chiles
    • salsa/rotel
  3. Spread the mixture in a small baking dish.
  4. Sprinkle the reduced-fat cheese and fat-free cheese on top.
  5. Bake 18–20 minutes until hot and bubbly.
  6. Add your toppings and serve warm!
