- 2 medium zucchini, cut into 3/4-inch pieces

- 3/4 teaspoon fine salt, divided
- 1/2 teaspoon black pepper, divided
- 2 cups cooked brown rice, hot
- 1 cup diced English cucumber
- 3/4 cup plain Greek yogurt
- 2 tablespoons fresh lemon juice
- 1 teaspoon finely grated lemon zest
- 1 small garlic clove, finely grated
- 2 tablespoons chopped fresh parsley
Method
- Heat the oven to 425°F. Line two sheet pans. Toss zucchini and pepper with 1 tablespoon oil, 1/2 teaspoon oregano, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Spread on one pan.
- On the second pan, toss chicken with the remaining oil, oregano, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Separate the pieces so they roast rather than steam.
- Roast both pans for 10 minutes. Stir the vegetables and rotate the pans. Continue roasting 8–12 minutes, until vegetables have browned edges and the thickest chicken pieces reach 165°F. Remove each pan as it finishes.
- Whisk yogurt, lemon juice, zest, garlic, parsley, and the remaining 1/4 teaspoon salt.
- Divide rice among four bowls, 1/2 cup each. Add one quarter each of the chicken, roasted vegetables, and cucumber. Spoon 3 tablespoons sauce over each bowl and serve.
Functions, cues, and troubleshooting
Separate pans prevent raw chicken juices from contacting vegetables and allow either component to finish independently. Equal chicken pieces cook at a similar rate. High heat browns the vegetables, while uncrowded pans let steam escape. Lemon juice loosens and sharpens the yogurt sauce; zest supplies aroma without more liquid.
If vegetables are pale and wet, they were crowded; spread them farther apart and roast a few minutes longer. If the chicken browns early but has not reached 165°F, lower the oven to 400°F and continue checking the thickest piece. Thick sauce can be loosened with 1 teaspoon cold water; watery sauce usually results from regular rather than Greek yogurt.
Substitutions, storage, and safety
Cooked quinoa can replace brown rice cup for cup. Yellow squash can replace zucchini, and dill can replace parsley. Chicken thighs may be used if cut evenly and cooked to at least 165°F, though their timing may differ. Do not put cooked food back into a bowl or onto a board that held raw chicken.
For meal prep, cool and refrigerate rice, chicken, vegetables, cucumber, and sauce in separate shallow containers within 2 hours. Use within 4 days. Reheat chicken, rice, and roasted vegetables to 165°F; add cucumber and sauce after heating. Discard refrigerated components left above 40°F for over 2 hours.
