This morning I made the mini pineapple upside cupcakes that I saw a post for. It made 48 mini cupcakes at 1 point each.
I used the:
*zero sugar yellow cake mix
*I cup water
*3 egg whites
*1/2 cup unsweetened applesauce.
*Mixed with spoon.
*Sprayed my mini cupcake pan with non stick spray and added
*just a pinch of brown sugar in each mini cup
*Pineapple chunks.
I cut each chunk into 3 pieces and placed 1 piece in each mini cup.
*filled each cup and baked @ 325 for 15 minutes.
They turned out good.
Easy Chickpea Salad
Ingredients 2 1/4 cups diced cucumbers (partially peeled) 1 cup diced (seeded tomato) 1/4 cup diced red onion 2 tablespoons fresh lemon juice 1/2 tablespoon minced fresh parsley 1 tablespoon extra virgin olive oil 1/2 teaspoon kosher salt and pepper (to taste)
