๐Ÿง€ Potato & Meatball Bake (Lightened Up)

โœจ Ingredients:

  • 3 large potatoes, peeled & thinly sliced
  • 1 small white onion, finely chopped
  • 300g lean ground meat (chicken or turkey for lower points)
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tbsp breadcrumbs (or oats for lower points)
  • Salt & black pepper
  • 1 tsp paprika
  • 1 tsp dried parsley
  • ยฝ cup low-fat shredded mozzarella
  • ยฝ cup tomato sauce (no sugar added)
  • Cooking spray

๐Ÿ‘ฉโ€๐Ÿณ Instructions:

  1. Preheat oven to 180ยฐC (350ยฐF). Lightly spray a baking dish.
  2. Prepare the meatballs:
    In a bowl, mix ground meat, onion, garlic, egg, breadcrumbs, and spices.
    Form into small meatballs.
  3. Slice potatoes thinly (this helps them cook evenly).
  4. Assemble:
    • Arrange potato slices and meatballs alternately in the dish (like in the photo).
    • Pour tomato sauce evenly over the top.
  5. Bake covered with foil for 35โ€“40 minutes until potatoes soften.
  6. Add cheese and bake uncovered for another 10โ€“15 minutes until golden and bubbly.

  • Use extra-lean meat to reduce points
  • Swap breadcrumbs for oats or skip completely
  • Use reduced-fat cheese (or less of it)
