Zero Point Muffins

These banana, egg, and blueberry muffins are a very simple four-muffin batch. They are naturally soft, with banana providing sweetness and the eggs creating structure. Since there is no flour or baking mix, expect a tender, egg-forward texture rather than the crumb of a standard bakery muffin.

  • 1 banana
  • 2 eggs
  • Blueberries, as needed
  • Cooking spray for the muffin pan

Instructions

  1. Preheat the oven to 375°F. Lightly coat four muffin cups with cooking spray.
  2. Mash the banana thoroughly in a bowl. Breaking down the larger pieces helps the muffins cook evenly.
  3. Add the eggs and mix until the banana and eggs are fully combined.
  4. Divide the mixture among the four prepared muffin cups.
  5. Add blueberries to each cup, distributing them as evenly as possible.
  6. Bake for 12–15 minutes, or until the centers are set. Cooking time can vary with the pan, berry quantity, and oven.
  7. Let the muffins stand in the pan for a few minutes before removing them. They will continue to firm slightly as they cool.

Recipe Tips

A ripe banana is easier to mash and provides better sweetness. Avoid filling the cups to the rim because the egg mixture can rise during baking. If using frozen blueberries, add them directly from frozen and be prepared for the batter to need a little more time.

Because blueberry quantity was not specified in the original formula, add only enough to distribute fruit through the four cups without overwhelming the egg mixture. Too many berries can release extra moisture and make the centers slower to set.

Storage and Reheating

Cool the muffins before transferring them to a covered container. Refrigerate promptly because they contain eggs. Reheat gently until warm, or eat them chilled. They may release a little moisture after refrigeration; placing a paper towel in the container can help absorb condensation.
