Chicken Burrito Bowls
Chicken burrito bowls layer lime cauliflower rice, seasoned chicken, black beans, corn, tomato, and yogurt sauce into four measured meals. The chicken and vegetables cook separately so every component has a clear method and safe endpoint.
Ingredients
Chicken
- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 2 teaspoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon fine salt
Bowls
- 4 cups fresh cauliflower rice
- 1 tablespoon lime juice
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 cup diced Roma tomato
- 1/2 cup plain Greek yogurt
- 2 tablespoons water
- 2 scallions, sliced
- Cooking spray
Equipment
- Two 12-inch nonstick skillets
- Four serving bowls, mixing cup, and thermometer
Instructions
- Toss chicken with oil, cumin, chili powder, paprika, garlic, and salt.
- Heat one skillet over medium-high. Cook chicken 7 to 9 minutes, turning, until every large piece reaches 165°F. Transfer to a clean plate.
- Coat the second skillet with spray. Cook cauliflower rice over medium-high for 5 to 7 minutes until tender and excess moisture evaporates. Stir in lime juice.
- Warm black beans and corn in the first clean skillet for 3 to 4 minutes, stirring, until steaming.
- Whisk yogurt with 2 tablespoons water.
- Divide cauliflower rice, chicken, beans, corn, and tomato among four bowls. Drizzle yogurt sauce evenly and add scallions.
Safety and Preparation Notes
Keep raw chicken, its cutting board, and utensils separate from ready-to-eat tomato and scallions. Chicken color alone does not determine safety; check several of the largest pieces with a clean thermometer.
Cook cauliflower rice uncovered so steam escapes. Drain and rinse beans to control sodium and keep packing liquid out of the bowl. Stir yogurt sauce only with clean utensils.
Substitutions
Ground turkey may replace chicken only with a separately developed crumble method and a 165°F endpoint. Pinto beans can replace black beans by drained quantity. Frozen cauliflower rice can be used after following package directions and evaporating excess moisture.
Storage
Store tomato and yogurt sauce separately from hot components. Refrigerate within two hours at 40°F or below and use within three to four days. Reheat chicken, beans, corn, and cauliflower rice to 165°F; add cold toppings afterward.
Assembly and Meal Preparation
For four balanced bowls, divide each cooked component before adding the next: about one quarter of the cauliflower rice, chicken, bean-corn mixture, and tomato goes into each bowl. Stir the yogurt sauce immediately before measuring it across the portions. This approach prevents the first bowl from receiving most of one ingredient.
For packed lunches, use containers with separate small compartments for the yogurt sauce and tomato. Vent the hot components briefly before covering, but refrigerate everything within the two-hour safety limit. Transport the meal in an insulated bag with sufficient cold packs. At serving time, reheat only the chicken, beans, corn, and cauliflower rice to 165°F, then add the chilled tomato, yogurt sauce, and scallions.
