WW Low-Point Chicken Lazone

Serves 4

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp chili powder (optional, for heat)
  • Salt & pepper, to taste
  • ½ cup fat-free chicken broth
  • 2 wedges Laughing Cow Light (or similar light cheese)
  • Cooking spray

Instructions

  1. Slice chicken into thin cutlets or strips.
  2. Mix garlic powder, onion powder, paprika, chili powder, salt & pepper.
    Season chicken well on both sides.
  3. Heat a nonstick pan with cooking spray over medium heat.
  4. Cook chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
  5. Lower heat. Add chicken broth to the pan, scraping up browned bits.
  6. Stir in Laughing Cow wedges until melted and smooth.
  7. Return chicken to pan, simmer 2–3 minutes until coated and creamy.

Serving ideas (still low point)

  • Over cauliflower rice
  • With steamed green beans or broccoli
  • Over zoodles

    (depending on your plan and cheese brand)

Optional upgrades (add points)

  • Splash of light cream or half-and-half
  • Serve over pasta or rice
