WW Chicken Tortilla Soup
Ingredients
- 1 lb (450 g) boneless, skinless chicken breasts — shredded
- 1 small onion, diced
- 2–3 cloves garlic, minced
- 1 (15 oz / 425 g) can diced tomatoes (no salt added if possible)
- 1 (15 oz / 425 g) can black beans, drained & rinsed (optional — adds a bit of points)
- 1 (15 oz / 425 g) can corn, drained (optional)
- 4 cups (about 950 ml) low‑sodium chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt & pepper, to taste
- Juice of 1 lime
- Fresh cilantro, chopped for garnish
Optional low‑point toppings:
Crushed baked tortilla strips, a squeeze of lime, chopped cilantro — count these in your Points.
Instructions
- Sauté aromatics:
In a large pot over medium heat, add the onion and garlic. Cook until softened. - Add main ingredients:
Add the shredded chicken, tomatoes, beans, corn, chicken broth, cumin, chili powder, salt and pepper. - Simmer:
Bring to a boil, then reduce heat and simmer 15–25 minutes until flavors meld. - Finish & serve:
Stir in lime juice, garnish with cilantro, and serve hot. Add a few baked tortilla strips if you like.
