Weight Watchers Chicken Salad on Croissants

  • 2 cups cooked and shredded skinless, boneless chicken breast
  • 1/2 cup non-fat Greek yogurt
  • 1/4 cup light mayonnaise
  • 1 celery stalk, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup grapes, halved
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste

For Serving:

  • 4 small whole wheat croissants

Instructions:

  1. Prepare the Chicken Salad:
    • In a large bowl, combine shredded chicken, non-fat Greek yogurt, light mayonnaise, chopped celery, chopped red onion, halved grapes, Dijon mustard, salt, and pepper. Mix until well combined.
